I have a 2014 Mustang Gt with an X pipe no resonators and Roush Axlebacks. It sounds pretty good but I want to be a little louder. Should I delete the cats and keep stock headers?

Cat deletes are an option. With what you have, that will make it boggling loud on the outside. The S197 is pretty well insulated from noise so, the neighbours are your likely adversary. Cat deletes may cause problems with the car throwing 02 sensor codes. Thus you may need a retune/shutting off the post cat secondary ones. If you have to retune anyway, you may wish to consider just going longtubes and getting some benefit.
